Happy Friday! I made this pasta for dinner about a month ago on my Instastories. It must have looked extra yummy, because of a bunch of you asked me to put up the full recipe on my blog. So here it is!
It’s so simple to make, and great for this time of year (nothing says summer like the taste of lemon!). Try it out and let me know what you think, I hope you love it!
Spaghetti al Limone
3/4 Box of Spaghetti
1 1/2 Cups of Parmesan Cheese
2 1/2 Tablespoons of Olive Oil
2 Cups of Spinach
3-5 Tablespoons of Pasta Water
Freshly Ground Peppper
Boil the spaghetti in salted water until al dente.
While spaghetti cooks, cut one of the lemons into slices and set aside for later. Zest the other lemon and cut it in half for juicing. In a large bowl combine lemon zest, parmesan, olive oil, and plenty of ground pepper.
Squeeze in both halves of the zested lemon (pro tip: squeeze the lemon over the zester to catch any seeds) over the parmesan, and mix it all together until it forms a smooth paste. Pour spinach over the paste and gently fold in.
Once the spaghetti is ready, spoon it directly into the bowl of spinach and lemon paste without using a strainer. Add 3-5 tablespoons of pasta water directly from the pot to create a sauce.
Mix everything in the bowl together until all the spaghetti and spinach are evenly coated. Serve immediately and top with extra parmesan and ground pepper. Garnish with a lemon slice and enjoy.
